Cinnamon-Spiced Zucchini Muffins

2 C. whole-wheat flour
½ c. light brown sugar
1 ½ TB. baking powder
½ tsp. salt
1 tsp. ground cinnamon
¾ c. milk
2 eggs, lightly beaten
3 TB. sunflower oil
3 TB. clear honey
Generous ½ c. zucchini, grated

1.     Preheat oven to 375. Grease 12 muffin cups.

2.     Mix the flour, sugar, baking powder, salt, and cinnamon in a large bowl.

3.     In a separate bowl, mix together milk, eggs, sunflower oil, honey and zucchini. Add wet ingredients to dry and mix briefly to combine.

4.     Spoon batter into prepared cups and bake 20 minutes until risen and lightly brown. Cool in the pan for 10 minutes and turn onto wire rack.
