Cinnamon Swirl Muffins

1-3/4 c. all-purpose flour
1 tsp. baking powder
Pinch of salt
1/2 c. superfine sugar
1 egg, lightly beaten
1 c. milk
7 TB. Butter, melted

FOR THE CINNAMON SUGAR
2 tsp. ground cinnamon
6 TB. Light brown sugar

1.     Preheat oven to 375. Grease 10 muffin cups. For the cinnamon sugar combine them both in a small bowl and set aside.

2.     For the muffins, mix the flour, baking powder, salt and sugar in a large bowl. In a separate bowl, mix together the egg, milk, and melted butter. Add wet ingredients to dry and mix briefly until just combined.

3.     Put the tablespoonful of batter into each prepared muffin cup. Sprinkle each muffin with a heaping teaspoon of cinnamon sugar, then spoon more batter and then cinnamon sugar. Finish with a layer of batter. Using a fine skewer, swirl the mixture in each cup.

4.     Bake in the oven for 18-20 minutes, or until risen and golden. Cool in the pan for 10 minutes, then turn onto wire rack.
