2 c. all-purpose flour
2 tsp. baking powder
½ tsp. salt
¼ tsp. ground allspice
¼ tsp. nutmeg
Generous ½ c. superfine sugar
1/3 c. margarine or butter
1 egg, slightly beaten
Scant 1 c. milk
3 clementines or mandarin oranges, peeled, broken into segments and chopped
FOR THE TOPPING (OPTIONAL)
Generous ¼ c. superfine sugar
½ tsp. ground cinnamon
¼ c. butter, melted
1. Preheat oven to 350. Grease 12 muffin cups.
2. For the muffins, mix the flour, baking powder, salt, allspice, nutmeg and sugar in a large bowl. Rub in the margarine or butter to form fine crumbs.
3. In a separate bowl, mix together the egg and milk, then add to the dry mixture. Mix briefly to combine and fold in orange pieces.
4. Spoon batter into cups and bake 20-25 minutes, or until risen and golden.
5. Meanwhile, for the topping, mix together sugar and cinnamon in a small bowl and set aside. Remove the baked muffins from the pan while still war,. Dip the tops of the muffins in melted butter and then in cinnamon and sugar. Transfer to cooling rack for 10 minutes.
